Okra's reputation is about to change. A study by researchers found that okra contains powerful compounds that promise to fight cancer and heart disease. Okra has the added benefit of a variety of healthy nutrients such as vitamin C, calcium, and potassium. And best of all, it's very low in calories.

The main ingredient in gumbo contains compounds that researchers say hold promise for fighting cancer. This compound is known as glutathione. It attacks cancer in two ways. First, as an antioxidant, it prevents the effects of free radicals, and unstable oxygen that can damage healthy cells and cause them to become cancerous.

Second, glutathione prevents other cancer-causing chemicals that cause cancer from damaging DNA, the chemical scheme that gives cells information about how to function. It does this by removing chemicals from the cells in the urine, which are eventually excreted from the body.

Researchers studied more than 1,800 people and found that those with the highest intakes of glutathione had a 50 percent lower risk of developing mouth and throat cancer than those with the lowest levels of the compound.
