Spanish Tomato Sauce Recipe (Salsa De Tomate)

Tomato sauce is prepared from tomatoes that are normally served as part of a meal rather than as a side dish.   • Ingredient for making tomato sauce:

  1. 1 kg approx 2 1/4 lbs ripe plum tomatoes, peeled and drained and diced seeds.

  2. 100 grams about 1/4 pound pancetta, diced (or bacon bone).

  3. 50 ml about 3 tablespoons extra virgin olive oil.

  4. 100 grams of onions about 1 medium size onion – diced.

  5. 100 grams of carrots about 2 large carrots.

  6. 25 grams about 2 tablespoons flour.

  7. 80 grams about 1/3 cup tomato paste.

  8. 1/2 liter about 2 1/4 cups water.

  9. 2 cloves of garlic left and crushed.

  10. Bay leaf.

  11. Salt, pepper, and sugar to taste.

  • Instructions for making tomato sauce:

Step 1- Heat olive oil and add pancetta or ham and cook slowly without browning.

Step 2- Add the diced carrots and onions and simmer over medium-high heat until cooked (but not browned).

Step 3- Sprinkle flour and stir without burning flour and cook for a few minutes.

Step 4- Add tomato puree, diced tomatoes, water, garlic cloves, and bay leaf.

Step 5- Add salt and pepper and a little sugar if the tomatoes are very sour.

Step 6- Simmer over low heat for about an hour.

Step 7- Pass through a sieve and season with salt and pepper as needed.
